Yeah, you clap after your mistake (as you say, you won't know beforehand that you're going to make one). And then the clap will be between the bit that you need to cut out and the bit that you want to replace it with. When you're starting out it's mostly a sign to say "listen to this, editing needs to be done here", but after a while you can start editing purely visually if you want, by looking at the sound waves and recognizing what needs to be taken out, because you know that the last take of the sentence is the one that you want. That's if you're not the type who wants to adjust pauses and splice together sentences and stuff. : )
