Beta-read a story for a friend and then had a Zoom talk about it. Also wrote 200 words of longfic. How about you?

In other news, the ginger beer I made has really evolved over time after bottling. It is now much less sweet and more carbonated (which is not surprising given what yeast does) but also most of the ginger taste is gone (which is surprising to me), leaving behind a more bitter taste. In fact, it now tastes almost exactly like a dry tonic! Huh.

Oh, interesting about the ginger beer! I've never made carbonated ginger beer, only a ginger infusion that you add to carbonated water, which produces a very gingery result!

It was quite gingery at first, and it's interesting to see how it changes. But I like dry tonic, so I was quite pleased with how it tastes now, too.

That's fascinating! I also would not have expected that result.

(My investment in this experiment is that bitter lemon is one of the very few soda-type things I drink.)

I am just making another batch, and probably I should measure the ingredients better, so it'll be more reproducible. Also time how long it takes to get bitter! My current experiment is beet kvass, which will be interesting.
