I just made a soup that turned out really good, and I thought I'd share the recipe (also then I can hopefully remember it myself). Despite the fact that I occasionally eat meat, I think I'm a pretty good vegan cook. This is because I often live with vegetarians and vegans, and communal cooking has to be adapted to the people with the most restrictive diets.

1 kg of carrots (or more)
five potatoes
two fennel bulbs
three onions
lots of garlic
lots of fresh ginger
juice from one orange
two cans of coconut milk
bouillon
Thai green curry paste
already-cooked black beans

Fry the onions + garlic in some oil, then add the coarsely chopped vegetables and hot water. Cook until soft. Add everything else except for the beans, and mix until smooth. Add beans. Enjoy!

I will be cooking this soon!

I also add beans to a lot of dishes as a source of protein, also to cut down on meat in meat dishes. I usually blend them (since I'm currently in a household of people who are not that appreciative of beans - I'm hiding them ;)). White beans and kidney beans work really well in meat sauces and lasagna-type dishes. Chickpeas work extraordinarily well in mashed potatoes.

Pretty much all of my soups are based on carrots and potatoes (my favourites!) but I'm getting fed up of the rather basic ones I've been making. This one sounds delicious. I'm certainly going to try it, thanks - just leaving out the black beans :)

Yum! I will be trying this! I was a vegan for many years (FRTDNEATJ, but really actually related to dS) and still all my home-cooking is vegan.
